Jeddah’s dining scene has officially welcomed a new kind of sushi spot, and people are clearly obsessed already.
If the old adage “three’s a trend, five’s a story” is true, we’re not quite there, but the pathway for Japanese handrolls is starting to take off in Saudi Arabia.

The minimalist concept has quietly arrived in the city, and despite keeping things understated, it’s already become one of the hardest tables to book. In fact, the earliest available reservations are for June.
Not bad for a restaurant built around a tightly curated menu and a seriously good handroll.
With both counter and table seating, Aiku offers a minimalist setting, featuring simple, pared-back oak interiors, soft lighting, and clean lines that give the lively handroll bar an intimate yet polished feel.
A central communal counter offers a front-row view of every handroll being prepared fresh to order, with nothing to divide the chefs from their guests.
It’s understated, unfussy, and entirely focused on the food. And that’s exactly why people are rushing to book a table.
Handrolls are the main draw, of course. For the uninitiated, Japanese handrolls are a more casual style of sushi, made by wrapping a sheet of nori (seaweed) around fillings such as fish and rice.
This isn’t the kind of place serving overloaded rolls drowning in sauce. Instead, the focus is on simplicity, timing, and technique.
At Aiku, handrolls will include spicy tuna, miso aubergine, spicy kani (crab sticks), and rich otoro. Traditionally, they’re made to order, in front of guests, and served immediately, so the rice is perfectly warm and the nori is still crisp, preserving the structural integrity of the rolls.
There’s also carefully prepared Wagyu nigiri with miso butter, small plates such as mini steak bites, and drinks designed to pair with the experience, rounding out the menu.
The beauty of a handroll bar is in the pacing. Rolls arrive one at a time directly from the counter.
There’s also something refreshing about how focused the concept feels. No oversized menu. No unnecessary extras. Just really good ingredients handled properly and served at exactly the right moment.
While Jeddah certainly isn’t short on Japanese restaurants, a dedicated handroll bar feels genuinely fresh for the city’s food scene. And judging by how quickly reservations have disappeared, it seems diners were more than ready for it.
